Minestrone Soup

Serves 15, about 20 cups (double this recipe for 30 servings)
4 TBLS olive oil
2 medium onions, chopped
4 carrots, chopped
4 celery stalks, chopped
2 tsp dried rosemary
3 TBSP dried basil or 1/2 cup fresh, chopped
3 TBSP dried parsley or ½ cup fresh, chopped
4 cloves garlic, minced
Add above ingredients to a large pot and cook until vegetables are tender. Then add:
2- 14 oz. can whole tomatoes (broken into pieces)
1- 16 oz. can pinto beans, drained
1- 16 oz. can pinto beans, drained AND mashed
20 cups water
Bring to a boil, then simmer, partially covered for 30 minutes.
Stir in:
8 ozs. orzo or other small pasta
Cook for additional 15 minutes.
