Soupe au Pistou

A French minestrone soup

2 ¼ cups diced zucchini 3 cups cooked navy or other white beans
2 ¼ diced carrots

1 can tomato paste
3 potatoes, peeled and diced 1 cup freshly grated Parmesan cheese
1 ½ cups chopped onion 1 ½ tsp. chopped garlic
2 ½ cups green beans, cut in ¾” pieces 1 cup fresh basil leaves or 3 Tbsp. Dried basil
1 Tbsp. salt ¾ cups olive oil
24 cups water

1) Combine zucchini, carrots, potato, onion, green beans, salt, and water in a large soup pot and bring to a boil. Reduce heat and simmer for 45 minutes. Add beans and cook for 30 minutes more.

2) Combine tomato paste, Parmesan, garlic, and basil in a blender with 1 cup liquid from the soup. Blend until smooth. Turn blender on low speed and slowly pour in olive oil. Stir ‘Pistou’ into soup.
